2 c. uncooked rice
1 large onion, chopped
1 can Chinese bean sprouts
1 ham slice, cut into small
pieces, or left over ham,
at least 2 to 3 cups
Cook rice according to directions and let cool. In a
large skillet place the cubed ham in a small amount of oil and
brown. Add onions and saute until tender. Add the cooled
rice, and sprinkle with soy sauce until the rice becomes brown
in color. Fold the rice and ham together as not to crush the
rice. Add can of bean sprouts which have been well drained.
Fold into the rice. In a separate pan, fry the eggs breaking
the yolks and fry hard. When done shred the egg and add to the
rice and serve.
