SUMMER GARDEN BOUNTY (Serves 4) 2 zucchini, cut in slices 1 c. soft white bread cubes 2 large tomatoes, sliced 4 slices bacon, cooked and drained 1 small onion, chopped 1 can mushroom soup 3 tsp. sour cream (optional) 1 c. grated Cheddar cheese Butter a shallow glass baking pan, approximately 9 x 13-inches. Cut zucchini in thin slices and place in bottom of pan. Top with soft bread cubes. Slice tomatoes over bread cubes and top with chopped onion. Heat can of mushroom soup. Add sour cream if desired. Bread cooked bacon over tomatoes and onions and pour soup mixture over all. Bake 25 minutes, uncovered at 325 degrees or until vegetables are tender. Sprinkle with cheese and return to oven until cheese is melted. Serve piping hot.
