FRIED RICE WITH CHICKEN 2 Tbsp. oil 1 clove garlic, crushed 1/2 lb. cooked chicken 2 eggs 3/4 lb. cooked rice 2 Tbsp. soy sauce salt and pepper to taste 2 scallions Heat oil. Peel and finely chop the onions, fry scal- lions and garlic in oil for 2 minutes over medium heat. Add rice, mix well. Heat through. Chop the chicken and mix with soy sauce, add to the rice mixture and mix well. Beat eggs until smooth. Season with salt and pepper. Pour into rice mixture in a thin stream, stirring constantly until eggs are cooked. Note: Pork, beef, shrimp, ham, bean sprouts, water chestnuts, bamboo shoots can be added or substituted as you desire.
