CARROT CASSEROLE 1 1/2 lb. carrots, peeled and sliced (4 1/2 c.) 1/2 c. mayonnaise 2 Tbsp. chopped onion 2 Tbsp. horseradish 1/4 tsp. salt dash pepper 1/4 c. crushed saltine crackers (about 7) 2 tsp. melted butter or margarine Cook carrots until just tender (about 10 minutes). Drain. Put in buttered casserole dish. Combine everything but crackers and butter, mix with carrots. Crumble crackers, mix with butter and spread over carrot mixture. Bake at 350 degrees for 30 minutes or until hot and bubbling. Serves 4.
