BROCCOLI QUICHE 2 pkg. frozen broccoli 4 eggs 1 c. whipping cream salt and freshly ground white pepper 1 1/2 c. Monterey Jack cheese, grated 9-inch pie shell Cook broccoli according to directions on package. Drain well, add cream and seasonings. Sprinkle bottom of pie shell that has been partially baked (10 minutes at 450 degrees) with a little of the cheese. Add egg mixture combined with the broccoli. Cover with remaining cheese. Bake at 400 degrees until custard is set. Make ahead of time and reheat if you wish, or make, refrigerate and bake when needed.
