BAKED CREAMED SPINACH

1/4 c. margarine
3/4 c. chopped onion
1/4 c. flour
2 tsp. salt
1/8 tsp. pepper
2 c. milk
3 eggs
4 (10 oz.) pkg. frozen chopped
spinach, thawed and well
drained

Saute onion in hot margarine in 4 quart saucepan until
tender. Stir in flour, salt and pepper until well blended.
Gradually stir in milk and cook until thickened. In small
bowl, beat eggs slightly with fork. Stir small amount of hot
sauce into eggs. Slowly pour egg mixture back into sauce,
stirring constantly and cook until mixture thickens. Do not
boil. Add spinach and stir until blended. Pour into 13 x
9-inch dish. (Cover and refrigerate unless serving in 1 hour.)
About 50 minutes before serving, preheat oven to 350 degrees. Uncover
and bake spinach mixture 40 minutes or until knife inserted in
center comes out clean. Makes 15 servings. Cut into servings.
