EGGPLANT CASSEROLE 1 medium eggplant 1 egg, beaten 1/2 c. milk 1 c. dry bread crumbs 2 Tbsp. melted oleo 1 small onion, chopped 1/2 c. grated cheese Peel eggplant and cut in cubes. Cook in boiling salted water 8 minutes and drain. Add oleo, milk, egg, onion and bread crumbs. Place in greased baking dish. Sprinkle cheese on top. Bake at 350 degrees for 30 minutes.
