PUERTO RICAN BEANS 3 (16 oz.) cans pinto beans (unseasoned) 1 medium onion 1 bell pepper 1/2 c. chopped ham 1/2 tomato, chopped 1 Tbsp. bacon drippings 2 garlic cloves, crushed 1/4 c. chopped onions 1/2 tsp. black pepper 1 tsp. oregano 1 (8 oz.) can tomato sauce Brown onions and bell pepper in skillet. Add tomato, ham and beans. Heat in heavy saucepan garlic cloves, onions, black pepper, oregano and tomato sauce. Add bean mixture and simmer for 1 hour or longer. Serves 8. Serve with Puerto Rican Red Rice.
