SCALLOPED EGGPLANT

1 medium eggplant
1 beaten egg
1/2 c. milk
1 Tbsp. melted butter
1 small onion
1 c. dry bread crumbs
1/2 c. bread crumbs
1/4 c. butter

Pare eggplant. Cut in 1-inch cubes. Cook in boiling
water for 8 minutes. Drain. Add milk, egg, butter, onion and
bread crumbs. Pour in greased baking dish and top with but-
tered bread crumbs. Bake at 350 degrees for 30 minutes. (Two slices
of stale bread cut in small cubes may be substituted for 1 cup
bread crumbs.)
