SWEET POTATO CASSEROLE

2 c. canned sweet potatoes or
boiled fresh potatoes
1/3 c. butter
1 c. sugar
1/2 tsp. salt
2 eggs
1 tsp. vanilla
2 tsp. flour

Mash sweet potatoes with mixer. Melt butter and add to
potatoes. Add sugar and salt. Beat eggs and add vanilla and
flour. Mix thoroughly. Grease Pyrex casserole and pour
mixture in. Spread with topping mixture and bake.

Topping:
1 c. pecans, chopped
1/3 c. flour
1/3 c. butter, softened
1 c. brown sugar
Mix ingredients and spread over potatoes. Cook in 350 degrees
oven for 35 minutes. Casserole may be prepared a day in
advance and refrigerated until ready to bake.
