RED RICE CASSEROLE|
1 lb. smoked sausage
4 tsp. bacon drippings or oleo
2 medium onions, chopped
1 green bell pepper, chopped
1 c. tomato sauce
1 c. cooked rice
salt and pepper to taste
Brown meat slightly in bacon drippings; add onions and
peppers. Saute until soft. Add tomato sauce; mix well. Bring
to semi-boil; add cooked rice and season with salt and pepper.
Stir well and serve.
