PUERTO RICAN RED RICE 3 Tbsp. bacon drippings 3 cloves garlic, crushed 1 onion, chopped fine 1 red bell pepper 1/2 c. chopped ham (cooked ham may be used) 3/4 tsp. oregano 1 tsp. salt 1/2 tsp. pepper 1 (8 oz.) can tomato sauce 3 c. hot water 2 c. raw rice In heavy saucepan saute onion, finely chopped pepper and ham in bacon drippings. Add seasonings, tomato sauce, hot water and raw rice. Bring to a boil. Reduce heat and cook on low for 45 minutes to 1 hour.
