SWEET AND SOUR RED CABBAGE 6 c. (1 medium head) shredded red cabbage 2 tart green apples, peeled and chopped 1/4 c. (or less) firmly packed brown sugar 1 tsp. salt 1/2 tsp. caraway seed (optional) dash of pepper 1/2 c. water 1/4 c. vinegar plus 2 Tbsp. Combine all in medium saucepan. Simmer, covered, for about one hour. Stir occasionally. Serves 5 to 6.
