BEETS IN ORANGE SAUCE 1 Tbsp. butter 2 Tbsp. flour 3/4 c. beet juice or water 1/2 c. orange juice 2 tsp. grated orange rind 2 tsp. sugar 3 1/2 c. diced, cooked beets In large saucepan melt butter. Stir in flour; add beet juice, water, orange juice, rind and sugar. Cook to thicken. Add beets; heat through. Serve hot.
