SWEET POTATO AND APRICOT CASSEROLE 1 lb. can whole sweet potatoes or 4 medium size sweet potatoes 3 Tbsp. undiluted frozen orange juice 3 Tbsp. melted butter 1 Tbsp. brown sugar salt pinch of nutmeg 2 eggs 1/2 c. chopped dried apricots Mash sweet potatoes. Mix with orange juice, butter, sugar and seasonings. Stir in unbeaten eggs and pieces of apricots. Spoon into shallow buttered casserole dish. Bake at 350 degrees for 20 to 25 minutes or until brown and puffy. Serves 4.
