BOHEMIAN EGGPLANTS

2 medium eggplants
1 or 2 baskets cherry tomatoes
1/2 to 3/4 c. Swiss cheese (or
Cheddar)

Peel, dice and steam the eggplant until soft. Mean-
while, simmer halved tomatoes in oil and parsley. Crush egg-
plant with a fork and add to tomatoes. Grate cheese on top and
stir in. Add salt and pepper.
