FRIED SPANISH RICE

1 c. long grain rice
2 Tbsp. shortening
1 medium chopped onion
1 garlic clove
1 tsp. salt
dash of black pepper
1/2 c. tomato sauce or fresh
tomatoes (2 qt.)
2 c. water
1 or 2 slices bell pepper

Brown rice in shortening; stir in chopped onions and
crushed garlic, after rice is browned. Remove from heat and
cool down. Cool down before adding tomato sauce and water.
Add salt and black pepper. Cover and simmer for 30 minutes on
low heat. If more water is needed, add 1/2 cup at a time until
fluffy. Add bell pepper just before you cover it simmering.
