ZUCCHINI PANCAKES 2 c. shredded zucchini 1/2 c. flour 2 eggs, separated 1/2 tsp. salt 1/8 tsp. pepper 1 c. grated cheese 1/4 c. minced onion 1/4 c. chopped green pepper Mix zucchini, onion, green pepper, flour, salt, pepper and egg yolks.
