BEETS IN ORANGE SAUCE 3 1/2 c. cooked beets, sliced or small whole beets 2 Tbsp. butter or margarine 2 Tbsp. flour 3/4 c. beet juice (or water) 1 1/2 tsp. grated orange rind 3/4 c. orange juice (frozen concentrate) 1/4 tsp. salt dash of pepper 2 tsp. sugar Melt butter. Stir in flour. Add beet juice slowly. Add orange rind, orange juice, salt, pepper and sugar. Cook until smooth and thickened, stirring constantly. Add beets and heat through.
