CORN FRITTERS

3/4 c. sifted flour
1/2 tsp. salt
1 tsp. baking powder
2 tsp. sugar
2 c. fresh corn kernels
1/4 c. margarine, cooled
2 eggs, separated
2 Tbsp. corn oil

Sift dry ingredients together and mix with corn. Beat
together margarine and egg yolks. Add to dry mixture. Whip
egg whites until stiff but not dry. Fold into corn mixture.
Heat corn oil in large skillet. Drop fritter batter by spoon-
fuls into hot oil and saute until golden brown. Turn and brown
other side. Drain on paper towels. Serve hot with maple
syrup. Good with sausage for brunch.
