LEIPZIG VEGETABLE MEDLEY 1/4 lb. fresh lima beans 1/4 lb. fresh string beans, cut up 1/4 lb. fresh peas 1 small head cauliflower, broken into flowerets 1/4 lb. button mushrooms 1/4 lb. butter 2 Tbsp. flour 1 c. cream 2 egg yolks salt and pepper nutmeg Cook all the vegetables in salt water; drain and keep hot. Melt the butter. Blend in the flour. Add the heated cream and simmer for 5 minutes. Mix the egg yolk with 1 tablespoon of cream. Add to the sauce and pour over the vegetables. Season to taste.
