POTATO MOUNTAIN potatoes (enough for number of people being served) paprika White Sauce: 1/4 c. butter 1/4 c. flour 2 c. milk 1/2 tsp. salt 1/8 tsp. pepper Mash potatoes 1 hour before dinner. Grease large casserole. Put mashed potatoes in. Scoop out center of potatoes. Pour in white sauce. Cover center with extra mashed potatoes. Sprinkle with paprika. Bake at 30 degrees for 45 minutes. White Sauce: In pan melt butter. Blend in flour. Gradually add milk. Cook until mixture boils and thickens, stirring constantly. Season with salt and pepper. Makes 2 cups.
