Peel potatoes and cut them lengthwise. Rub all over
with crushed garlic. Put cut side down on cutting board and
butterfly by cutting into 1/8-inch slices taking care that
potatoes keep their shape. Place potatoes on cookie sheet and
push tops of slices from one end as if they were dominoes
beginning to fall for a scalloped effect. Brush with clarified
butter and bake in 375 degrees oven until brown, about 40 minutes.
