KEY WEST BLACK BEANS|
12 oz. black beans (dried)
1 c. chopped onion (coarse)
1 c. chopped green pepper
1 clove garlic
3/4 tsp. cumin
pinch of oregano
1 c. olive oil
Clean and soak beans overnight. Drain. In a large pot,
place beans and enough water to cover. Add rest of ingredi-
ents. Boil hard for 10 minutes, then simmer until done. Serve
over rice. Offer chopped onions and shredded cheese as gar-
nish, if desired.
