EGGPLANT WITH CHEESE 1 medium eggplant 1 medium onion, chopped 1 egg, lightly beaten 1/2 c. milk 1/2 tsp. salt 1/4 tsp. pepper 1 c. grated Cheddar cheese 1 1/2 slices whole wheat bread, cubed Grease an 8 or 9-inch square pan. Preheat oven to 350 degrees. Cube eggplant and boil with chopped onion until tender. Mash and put in pan. Add egg, milk, salt, pepper, bread and 1/2 cup of cheese; stir. Top with remaining 1/2 cup cheese and bake for 25 minutes.
