1 1/4 lb. zucchini
1/4 c. flour
3 Tbsp. chopped fresh parsley
3 Tbsp. chopped green onion
1 clove garlic, chopped
1 1/4 tsp. salt
3/4 tsp. oregano
18 cherry tomatoes
Finely chop the zucchini. Beat eggs; add flour, half
the cheese, parsley, onions, garlic salt, oregano and pepper.
Stir in zucchini. Pour into 1 1/2 quart baking dish. Cut
tomatoes in half; arrange cut side up over zucchini. Sprinkle
with remaining cheese. Bake uncovered at 350 degrees for 30 minutes
or until hot and bubbly.
