ZUCCHINI ITALIANO 1 onion, chopped 2 cloves garlic, chopped 1 medium size zucchini, cubed 1 (16 oz.) can tomatoes 2 stalks celery, sliced 1 medium green pepper, cubed 1 small potato, sliced 1 tsp. basil, oregano and Italian seasoning pepperoni, sliced (if desired) Saute onion and garlic in 1 tablespoon bacon fat. Peel and cube zucchini. Add to onion and garlic along with celery, pepper and potato. Add basil, oregano and Italian seasoning. Add the can of tomatoes, which you have cut up. Simmer until vegetables are tender. If too dry, add a can of tomato sauce and cook a little more. Add pepperoni slices if desired. Serve with grated cheese (Parmesan or Romano).
