SQUASH DELITE CASSEROLE|
1 lb. summer yellow squash
1 tsp. sugar
1 c. mayonnaise
1/2 c. chopped onions
1/4 c. chopped green pepper
1/2 c. grated Cheddar cheese
1/2 c. chopped pimento
1 tsp. salt
1/2 stick margarine
1/2 c. bread crumbs
Cook squash until tender; drain. Add margarine and
mash. Mix sugar, egg, mayonnaise, pepper, onion, salt and
cheese. Add to squash. Pour mixture into a buttered casserole
dish. Top with bread crumbs and cheese. Dot with butter.
Bake at 350 degrees for 35 to 40 minutes.
