SWEET POTATOES AND FRUIT 6 medium sweet potatoes 2 c. tart apples (Granny Smith), thinly sliced 1 1/2 c. brown sugar dash of cinnamon chopped pecans (if desired) raisins (if desired) butter Heat oven to 350 degrees. Cook sweet potatoes in skin 20 minutes. Peel and cut in 1/2-inch slices. Cook apples in water 5 minutes. Reserve apple water. Grease baking dish. Place sweet potatoes and apples in alternate layers. Sprinkle with brown sugar and dash of cinnamon. Sprinkle on chopped pecans and raisins, if desired. Dot with butter and a small amount of apple water to soften brown sugar. Bake 30 minutes.
