STUFFED POTATOES 4 to 6 large baking potatoes 1 c. grated Cheddar cheese 1 can mixed vegetables or 1 pkg. frozen mixed vegetables 2 tsp. garlic powder 1 tsp. pepper 1/4 c. milk 2 tsp. butter or margarine Bake potatoes; remove from oven and cut lengthwise. Let cool but keep warm. Scoop out potato, leaving skin in tack. Mash the potatoes as usual with milk, butter, garlic powder and pepper. Add cheese and vegetables. Stuff mixture back into the potato skin. Bake at 350 degrees for about 45 minutes or until done. Cheese may be sprinkled on top. With a salad, you have a complete meal.
