MUSHROOM PIE 1 onion (large) about 3/4 lb. mushrooms 3 eggs 1 c. sour cream 1/2 tsp. tarragon or chopped chives salt and pepper Saute onion about 5 minutes. Saute mushrooms about 5 minutes. Beat eggs and sour cream. Add mushrooms, onion and seasoning. Prebake at 425 degrees a deep dish pie shell 5 minutes. Pour mixture into shell. Top with shredded Cheddar cheese. Bake at 425 degrees about 25 minutes.
