POTATO RATATOUILLE

2 1/2 lb. potatoes
3 slices bacon
1/4 c. oil
1 medium onion, sliced
1 clove garlic, minced
1/2 lb. green beans, broken
3 medium zucchini, thickly
sliced
2 large tomatoes, cut in
chunks
1 1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. sweet basil
2 Tbsp. minced parsley

Cut potatoes in 3/4-inch cubes. Cut bacon in 1-inch
pieces and fry. Remove bacon; add oil and heat. Add onion and
garlic; saute until soft. Add potatoes, green beans, zucchini,
tomatoes and fried bacon. Add seasonings. Cover and simmer 20
to 25 minutes, stirring gently from time to time, until vegeta-
bles are tender. Makes 6 to 8 servings.
