CRESCENT ZUCCHINI PIE

4 c. thinly sliced unpeeled
zucchini
1/4 c. margarine
1/2 c. chopped fresh parsley
or 2 Tbsp. dried parsley
1/4 tsp. garlic powder
1/4 tsp. basil
1/4 tsp. oregano
1/2 tsp. salt
1/2 tsp. pepper
2 beaten eggs
2 c. (8 oz.) shredded
Mozzarella cheese
3/4 lb. pork sausage, loose,
or 3/4 lb. hamburger
mushrooms, if you like

Cook and stir 4 cups thinly sliced unpeeled zucchini, 1
cup chopped onions and 1/2 cup oleo in frypan for 10 minutes.
Stir in 1/2 cup parsley or 2 tablespoons dried parsley, garlic
powder, basil, oregano, salt and pepper. Combine beaten eggs,
shredded Mozzarella cheese. Stir into zucchini mixture the
fried sausage and mushrooms. Line crescent rolls in bottom and
sides of 10-inch pan. Press to form crust. Pour mixture into
pan. Bake at 375 degrees for 15 to 20 minutes.
