FREEZER IN A MINUTE RICE

2 1/2 c. water
1 c. long grain rice
(converted rice)

Bring water and rice to a boil; cover tightly and simmer
10 to 12 minutes, half the usual time. Rinse rice under cold
water; drain and freeze, uncovered, until solid. Remove the
rice block by immersing briefly in cold water; wrap and return
to freezer.
To use rice, mix 1 cup boiling water, 1 tablespoon
butter and 1 teaspoon salt. Unwrap rice block; put in pan.
Cover; simmer for a few minutes or until rice is hot. Drain
well; serve.
