POTATO PUFFS peanut oil or corn oil, for deep fat frying 1/2 c. flour 1 tsp. baking powder 1/4 tsp. salt 1 c. mashed potatoes 1 egg, slightly beaten 1 tsp. minced parsley salt (optional) Heat oil in fryer to 385 degrees. Combine flour, baking powder and salt in medium bowl. Add potatoes; blend thoroughly. Add egg and parsley; blend well. Drop potato mixture by teaspoon- fuls into not oil. Deep fat fry until golden brown. Remove with slotted spoon. Drain on paper towels. Sprinkle with salt, if desired.
