4 zucchini (medium)
4 crookneck squash (medium)
4 Tbsp. minced onion
1 tsp. salt
pepper to taste
1 tsp. oregano
2 tsp. basil
2 c. shredded Cheddar cheese
butter or margarine
Cut zucchini and crookneck into thin (1/8 to 1/4-inch)
slices. Combine onion, salt, pepper, oregano and basil. Layer
some squash in a 2 quart baking dish and sprinkle lightly with
onion mixture, then part of cheese and dot with butter. Repeat
layers until all ingredients are used. Cover and bake at 325 degrees
for 1 1/4 hours.
Note: Half recipe cooks in 45 minutes. Serves 4 to 6.
