SPINACH SOUFFLE 1 pkg. frozen chopped spinach 3 eggs 3 Tbsp. flour 1/4 c. butter 1 lb. small curd cottage cheese salt and pepper to taste Cook spinach; drain well and cool. Eggs are beaten with flour and added to spinach which has had butter, salt and pepper added to it. Fold in cottage cheese and Cheddar cheese. Bake 1 hour at 350 degrees.
