CHEESY VEGETABLE CASSEROLE

2 (10 oz.) pkg. frozen mixed
vegetables
1 c. chopped celery
1/3 c. chopped onions
1 c. mayonnaise
1/2 c. (2 oz.) shredded
Cheddar cheese
1/4 tsp. salt
1/4 tsp. pepper
2 c. bite-size Cheddar cheese
crackers, crushed
1/4 c. butter or margarine,
melted
1/2 c. (2 oz.) shredded sharp
Cheddar cheese

Cook frozen mixed vegetables according to package
directions; drain well. Combine cooked vegetables, celery,
onion, mayonnaise, 1/2 cup cheese, salt and pepper; spoon into
a greased 2 quart casserole. Combine remaining ingredients;
sprinkle over top. Bake at 300 degrees for 30 to 40 minutes. Serves
8.
