CARROTS

4 1/2 c. peeled and sliced
carrots (1 1/2 lb.)
2 Tbsp. horseradish
1/2 c. mayonnaise
2 Tbsp. chopped onion
salt and pepper to taste
7 crushed soda crackers
2 Tbsp. melted butter

Cook carrots in salted water until tender; drain. Put
in one quart casserole. Spoon mixture of mayonnaise, horserad-
ish and onion on top of carrots. Sprinkle crushed crackers and
melted butter over top. Bake at 350 degrees for 30 minutes. (Mix
crackers in melted butter.)
