POTATO PANCAKES 2 large raw white potatoes 1 Tbsp. grated onion 2 eggs, unbeaten melted fat 2 Tbsp. flour 1 1/2 tsp. salt sprinkling of pepper Wash and pare raw potatoes, grate them on fine grater. Quickly stir in onions, eggs, flour and seasonings. Drop from a tablespoon into 1/4 inch hot fat in a skillet, spreading each cake with the back of a spoon until it is thin. Saute to a keep golden brown on both sides. Makes 8 to 10 pancakes. Note: The pancakes must be cooked immediately after preparing, as the potato mixture darkens as it stands.
