CHINESE FRIED RICE

1 c. diced pork, chicken,
shrimp, beef, anything
2 eggs
1/2 c. chopped snow peas
4 stalks green onion, chopped
4 to 6 c. cooked long grain
rice, cooked and
refrigerated overnight
4 Tbsp. oil
1/2 can bamboo shoots

Seasoning:
2 tsp. salt
2 tsp. sugar
3 Tbsp. soy sauce
1/2 tsp. pepper
1/2 tsp. sesame oil

Beat eggs thoroughly. Put 2 tablespoons oil into pan
and fry eggs into a big pancake. Remove egg from pan and cut
into pieces. Put another tablespoon of oil into pan and fry
meat until done. Add peas and mix. Heat rice and mix with
another tablespoon of oil; add green onion and bamboo shoots.
When rice is hot, stir in seasoning and mix with all cooked
ingredients. Can refry to warm.
