STUFFED BAKED ZUCCHINI 2 to 4 large zucchini (allow 1/2 per serving) 1 c. fresh bread crumbs 1/4 c. chopped onion 1 medium tomato, chopped 1/2 tsp. salt 1/4 tsp. pepper 2 Tbsp. margarine, melted 1/2 lb. grated Cheddar cheese 4 slices crisp, cooked bacon, crumbled Trim ends of zucchini. Cook, covered, in boiling salted water 5 to 8 minutes; drain. Cut in half lengthwise. Scoop out center of each; chop. Combine chopped zucchini, bread crumbs, onion, tomato, seasonings and margarine. Toss lightly. Fill each shell with mixture, plus bacon crumbled. Place in shallow baking dish. Top with grated cheese and bake at 350 degrees for 25 to 30 minutes.
