SKILLET ZUCCHINI PARMESAN 2 Tbsp. diet margarine 6 medium zucchini, sliced 1/4 tsp. butter flavored salt 1/2 tsp. oregano 1/2 c. grated Parmesan cheese Melt the margarine in a heavy nonstick skillet. Add the zucchini and season it with salt and oregano. Cover the pan tightly and cook over low heat about 5 minutes, just long enough to heat the slices through. Sprinkle the zucchini with the cheese and serve immediately. Makes 12 servings at 75 calories each.
