NEW ENGLAND BAKED BEANS

2 lb. soldier beans
1 scant tsp. salt
1/3 c. brown sugar
1/3 c. white sugar
1/4 tsp. pepper
1 tsp. dry mustard
1/2 tsp. ginger
8 oz. salt pork
1/2 c. molasses

More sugar may be added to taste after the beans are
partially done if you like them sweet.
Soak beans overnight in lukewarm water. Simmer until
skins crack when blown upon. Stir often while parboiling. Add
small pinch of soda and quickly stir and drain in colander over
which run cold water to rinse off the soda. Score rind of pork
and cut in 1 to 2-inch squares. Add half of pork in bottom of
pot over which add the beans. Add remaining pork. Dissolve
dry ingredients in 2 cups warm water. Pour over the beans.
Add more hot water until it can be seen. Cover and bake in
350 degrees oven about 6 hours, adding more water as needed.
