BROCCOLI-RICE BAKE (Microwave) 1 (10 oz.) pkg. frozen chopped broccoli 2 Tbsp. water 1/2 tsp. salt 1/2 c. chopped onions 1 Tbsp. margarine 1 (10 3/4 oz.) can cream of mushroom soup 2 c. cooked rice 1 c. grated Cheddar cheese In a 1-quart microwave casserole, place broccoli, water and salt. Cover; cook on High for 5 minutes. Stir once during cooking to break up pieces. In 1 1/2 quart microwave dish, cook onions and margarine for 4 minutes. Stir in soup, rice and broccoli. Top with cheese. Cook on High, covered, for 10 minutes. Rotate dish 1/4 turn after 5 minutes of cooking. Makes 6 servings.
