RED CABBAGE (Microwave) 3 c. red cabbage, chopped in processor 1 Tbsp. butter 2 thick slices onion, sauteed 1 minute in microwave 1 Tbsp. brown sugar 1/4 c. red wine vinegar 1 1/2 oz. apple jelly (4 Tbsp.) 2 Tbsp. red wine Mix cabbage, butter, onion, brown sugar and vinegar together in 1 1/2 quart casserole. Cover and microwave on High 25 minutes or until done. Add salt and pepper to taste. Add 1 1/2 ounces apple jelly. Let stand awhile. Before serving, stir in 2 tablespoons red wine. (If apple is available, peel, core and cook with cabbage. One teaspoon sugar can be added if desired and jelly omitted.)
