LEMON RICE 1 large lemon 3 c. water 1 tsp. salt 1 1/2 c. uncooked long grain rice Grate lemon rind; set aside. Squeeze lemon. Place 3 tablespoons lemon juice, rice, salt and water in saucepan. Bring to boil; stir. Cover and turn heat on low. Cook on low, about 20 minutes or until all liquid is absorbed. Garnish with grated lemon peel.
