CRUSTLESS ZUCCHINI PIE|
3 c. thinly sliced zucchini
1/2 c. grated onion
1 clove minced garlic
1/2 c. grated Parmesan cheese
1/2 c. oil
1 c. Bisquick
4 eggs, beaten
1/4 tsp. salt
1/2 tsp. marjoram
1 tsp. parsley flakes
dash of pepper
Mix ingredients until zucchini is coated. Pour into
greased 10-inch pie plate or 9 x 13-inch baking dish. Bake in
350 degrees oven until golden, about 30 minutes. Serve with drinks or
as meal side dish. Serve warm. Serves 6 to 8.
