ZIPPY ZUCCHINI

1 c. sliced onions
3 Tbsp. margarine or butter
1 envelope Italian salad
dressing mix
2 lb. zucchini, cut in thick
slices
1 (16 oz.) can tomatoes or 2
medium tomatoes, cut in
wedges

Saute onions in butter until lightly browned. Add
zucchini and tomatoes; stir in salad dressing mix. Bring to a
boil; reduce heat, cover and simmer about 10 minutes or until
zucchini is tender. Makes 6 cups or about 10 or 12 servings.
