MUSHROOMS QUICHE 4 Tbsp. butter 2 tsp. minced onions 1 lb. mushrooms, diced 1 1/2 tsp. salt 1 tsp. lemon juice 4 eggs 1 c. half and half 1/8 tsp. pepper bacon, crumbled (optional) 1/8 tsp. nutmeg 1/2 c. grated Swiss cheese 1 baked pie shell Melt 3 tablespoons butter; add onions, mushrooms, 1 teaspoon salt and lemon juice. Simmer, covered for 10 minutes or until liquid evaporates and mushrooms are tender. Beat eggs with cream. Add remaining ingredients (salt, pepper, nutmeg and bacon). Stir in mushroom mixture; pour into pie shell. Sprinkle with cheese, dot with remaining butter. Bake at 350 degrees for 35 minutes or until knife inserted comes out clean.
